Squirrel Cake

Now don't let the title fool you. Squirrel Cake is good. Really good. It was designed as a special Father's Day treat, made and served today, as cake batter doesn't freeze well. Why is it called Squirrel Cake? Because it's kind of squirrely, but it's for humans, not squirrels.

Here is the original recipe, more appetizingly referred to as Old Fashioned Columbia Cake.
1/4 c sugar
3 eggs
1 tbs butter melted
1 c flour
1/4 c peanut butter
1 tbs honey
1 c oats
1 tbs coconut milk

Mix well. As you might imagine, the batter is somewhat stiff. Bake at 350 degrees for 17.5 minutes.

Note: Chef discovered that the amounts didn't make enough batter to fill an 8" round cake pan, so she opted to make 9 cupcakes.

I'll pass along to the little dude. She came up with the ingredients and the measurements. If you make it, be sure to add more liquid, as ours came out rather thick. But it was really good. We ended up eating them for breakfast.
